Pineapple Tart Or Pineapple Shortcake Facts

What I know about pineapple tart is that I think they are a type of cake or biscuit that they asians like to eat especially the Chinese and Malay. It is very popular in countries like Malaysia , Singapore, Hong Kong, Taiwan and other Asian Countries.

A lot of people like to bake pineapple tarts at home, because it is much healthier and easier. My mother always bake pineapple tart at home especially during Lunar New Year, it is so delicious. The crust of the biscuits is not so sweet but it goes perfectly with the sweet taste of the pineapple filling inside the pineapple tarts.

I think pineapple tarts is not very popular in the western countries, so I like to use this opportunities to share this delicious biscuits recipes to everyone around the world who never try this delicious biscuit before. Most of the countries in Asia like to call it pineapple tart, but in the western countries a lot of people would calls it pineapple shortcake. While a lot of people calls it pineapple tart cookie too.

Pineapple Tart's Filling

Pineapple Tart Jam Recipe

The pineapple tart filling is what you must not miss because it is one of the main ingredients that make the pineapple tart to be very tasty. What you need is:

2 Grated Pineapple

200g of Sugars

2 Cloves

2cm of cinnamon sticks

1 tablespoons if lime juice

Pineapple Tart's Filling Steps:

Mix all the ingredients together and out it in a cooking pot, boil it until it get dry. (Make sure you don't burn the pineapple filling, stir is for a bit to prevent burnt.)

Once it is dry, stop boiling and take out the dried pineapple tart's filling to let it cool off.

Once it is cool, split the pineapple tart's filling into small round shapes pineapple tart's filling. (For each small round shapes pineapple tart's filling you get, you can make a pineapple tart with it.)

(Note: The pineapple tart filling is also known as pineapple tart jam.)

The pineapple tart crust is simply the biscuit crust that uses to cover the pineapple fillings, this is the recipes that you need to make the pineapple crust.

300g of butter (Ready to melt)

60g of powdered sugar

1 egg yolk

400g of baking flour (plain)

2.5 Tablespoons of Custard Powder

Pineapple Tart's Crust Steps:

Item 1: Mix the baking flours with all the custard powder. Make sure they are aerate and mixed completely. (Use a flour sifter if you have one.)

Item 2: Mix all the butter, sugar and egg yolk together until you get a creamy texture.

Mix Item 1 and Item 2 together and press it until you get a pineapple tart pastry dough. Put the pineapple tart dough aside and do not touch it for about 40 minutes.

At this point of time, you can wash up all the cooking tools that you do not need anymore.

Pineapple Tart Final Steps

1.) Put pineapple tart crust pastry into a "pineapple tart mould cutter" and cut out about 6 cm. Now you place the pineapple tart fillings on top of the cutted pineapple crust pastry, roll the pineapple crust pastry to get a complete uncooked pineapple tart. 2.) Now use a beaten egg and add a little bit of water into it, then glaze the top layer of the pineapple tart with the beaten egg. (Make your pineapple tart more shiny and smooth.)

3.) Bake the uncooked pineapple tart with about 160 degree celsius until it becames light brown. (Bake about 20 to 25 minutes)

4.) Wait for it to cool and here comes your pineapple tarts!

This is an adaptation of the recipe found over at the Fresh from the Oven blog.

Ingredients

  • 2 1/2 cups (350g) all-purpose flour
  • 2 sticks butter
  • 1/4 teaspoon salt
  • 2 egg yolks
  • 4 tablespoons confectioners’ sugar/icing sugar
  • 2 tablespoons cornstarch (corn flour)
  • 1 egg yolk (lightly beaten for egg wash)
  • 2 cans (20 oz can) crushed pineapples
  • 8 -10 tablespoons sugar (to taste)
  • 1 teaspoon cornstarch or corn flour (mixed with 1 teaspoon water)

Instructions

  1. Drain the pineapple slices and squeeze out any extra juice. Blend the canned pineapples until it’s mushy, about 10 seconds.
  2. Mix the pineapple and sugar and cook over medium heat until most liquid has evaporated, and the filling turned golden. Stir constantly using a wooden spoon to avoid burning. Taste, and add more sugar when needed. Add in the cornstarch (corn flour) to thicken the filling.
  3. Set filling aside to cool in the refrigerator.
  4. Sift flour, salt, cornstarch, and sugar into a medium bowl. Soften the butter to room temperature. Add in the egg yolks and the flour. Knead to form the dough.
  5. Divide the dough and pineapple filling each into 24 equal rounds. Flatten the pastry dough and place a bit of the pineapple filling in the middle. Use the dough to cover the filling. Round up the tart and shape into a roll about 1.5 inches long. Use a fork to make criss-cross patterns on the tart and then brush it with the egg wash.
  6. Preheat the oven for 350F and bake for 20-25 minutes or until light brown.
